Wonderful Day of Baking

I had such a great day baking...mostly by myself because Braeden was napping or watching Sesame Street and Ben was at work.  I found the perfect whole wheat bread recipe that I made it and it turned out perfectly.  It was evenly baked and browned with not a lot of ingredients.  It was easy to knead in my breadmaker and it is so sweet and delicious.  I will post a picture and HERE is the link if you want to try it. I  also made some homemade, super EASY strawberry jam.  All I did was 2 cups pureed strawberries, 1 cup sugar, 1 TBPS pectin, and 2-3 teaspoons lemon juice.  Put all of those in the breadmaker and put on the basic setting and let it get stirred for 6 minutes.  After that turn off the breadmaker and put in the bake setting for 10 minutes and let it heat.  When that is done, the jam is done.  Put it in bottles (I use plastic freezer cups with lids) and let cool in fridge. This is such a good jam and it is so easy.  It only lasts 3 weeks or so because there are no preservatives, but with out new bread recipe...I think we will be able to eat it up quickly.  Try it...you will love it.

My cousin Kristi has a recipe on her blog for the easiest, yummiest, and healthiest (of all cheesecake recipes). HERE is the link for her cheesecake recipe. I used fat free cream cheese and it turned out awesomely and delicious. Thanks Kristi for sharing this new family favorite.  This was just what I needed today :)
